At the onset of the pandemic in March of 2020, DHEC’s Food Program was challenged as the core of our work involves field activities that put our staff in direct contact with the foodservice industry. Stay-at-home orders and safety precautions seemed like insurmountable obstacles to our business model. Recognizing the potential impact of the suspension of field activities on the food industry, we shifted our paradigm and developed a virtual surveillance method. To date, we have conducted over 27,000 virtual inspections throughout the state. This presentation is designed to share the development and use of these new tools.
